These delicious muffins take 30 minutes to make and bake. Super quick and easy, delicious and perfect for on the go breakfasts, even for picnics and lunchboxes.

For this recipe you will need a 12-hole muffin tin and 10 muffin cases.
Pre-heat your oven to 200ºC Fan.
Ingredients:
250g Plain Flour
2 Tsp Baking Powder
1/2 Tsp Bicarbonate of Soda
1/2 Tsp Sea Salt
125ml Milk
125ml Soured Cream
2 Eggs
100ml Sunflower Oil
125g Smoked Salmon (chopped into pieces)
Large Handful of Fresh Chives or Dill (chopped)
How I make my Smoked Salmon Muffins:
First mix together your dry ingredients (flour, baking powder, bicarb and salt) in a bowl.
In a separate bowl, mix together the wet ingredients (milk, soured cream, eggs and sunflower oil).
Add the smoked salmon and chives/dill to the wet ingredients and mix.
Then, pour the wet ingredients into the flour mixture and stir with a wooden spoon very slowly and carefully until all the flour has been incorporated.
Spoon equal amounts of batter into your 10 muffin cases.
Bake at 200ºC Fan for 20-25 minutes.
Goes well for breakfast, as a snack and even with a salad for lunch. Perfect for lunchboxes!
